Straight from County Cork. Joey's mom got this recipe from her relatives in Ireland for International Day at St. John's School.
List of Ingredients
- 4 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- 8 ounces butter, 2 sticks
- 1 lb. raisins
- 1 1/4 cup sugar
- 3/4 cup buttermilk
- 3 eggs
Instructions
- Combine flour, baking soda and cream of tartar.
- Cut in butter until crumbly. (Use hands or 2 knives)
- Add in sugar and raisins.
- Beat eggs.
- Add buttermilk and eggs and mix well to form a stiff dough.
- Put into an 8 inch round greased pan.
- Bake at 425 degrees F. for 15 minutes. Then reduce heat to 325 degrees F. and continue baking for 1 to 1 1/4 hour, until knife inserted in middle comes out clean.
