    Recipe Introduction


    Straight from County Cork. Joey's mom got this recipe from her relatives in Ireland for International Day at St. John's School.


    List of Ingredients


    • 4 1/2 cups flour
    • 1 tsp baking soda
    • 1 tsp cream of tartar
    • 8 ounces butter, 2 sticks
    • 1 lb. raisins
    • 1 1/4 cup sugar
    • 3/4 cup buttermilk
    • 3 eggs


    Instructions


    1. Combine flour, baking soda and cream of tartar.
    2. Cut in butter until crumbly. (Use hands or 2 knives)
    3. Add in sugar and raisins.
    4. Beat eggs.
    5. Add buttermilk and eggs and mix well to form a stiff dough.
    6. Put into an 8 inch round greased pan.
    7. Bake at 425 degrees F. for 15 minutes. Then reduce heat to 325 degrees F. and continue baking for 1 to 1 1/4 hour, until knife inserted in middle comes out clean.
