    Tropical Banana Bread (Light Butter Recipe)Banana bread, made with light butter, is the perfect anytime treat.

    List of Ingredients





    2 cups all-purpose flour
    3/4 cup sugar
    1/2 cup stick Land O Lakes® Light Butter, softened
    2 Land O Lakes® All-Natural Eggs
    1 tablespoon freshly grated orange zest
    1 teaspoon baking soda
    1 teaspoon vanilla
    1/2 teaspoon salt
    1/4 cup orange juice
    2 large (1 cup) ripe bananas, mashed
    1 cup sweetened flaked coconut

    Recipe



    Heat oven to 350°F.
    Combine all ingredients except orange juice, bananas and coconut in large bowl.
    Beat at low speed, scraping bowl often, until well mixed.

    Add orange juice and bananas. Continue beating, scraping bowl often, until well mixed. Stir in coconut.

    Spread batter into greased 9x5-inch loaf pan. Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove from pan to wire cooling rack. Cool completely.
