    • 10 eggs
    • 3 cups sugar, divided
    • 1 cup water
    • 1 1/2 pounds bittersweet chocolate, broken into small pieces
    • 2 cups unsalted butter, softened


    Instructions


    1. Preheat oven to 375 degrees F. Line a 12 inch cake pan that is 2 inches deep with wax paper. Then grease and flour it.
    2. In a mixing bowl, beat eggs with 1 cup sugar until the volume quadruples. This will take at least 10 minutes with an electric mixer.
    3. Heat remaining 2 cups sugar in a small pan with water until the sugar has dissolved into a syrup.
    4. Place chocolate and butter in the hot syrup and stir to combine. Remove from the heat and allow to cool slightly.
    5. Add warm syrup to the eggs and continue to beat, gently, until completely combined - about 20 seconds, no more.
    6. Pour batter into the cake pan and place cake pan in a larger baking pan of equal height. Place pans in the oven and pour hot water into the larger baking pan. This is a bain-marie. It is essential, if the cake is to cook evenly, that the water comes up to the rim of the cake pan.
    7. Bake inthe oven for 30-40 minutes, or until set, Test by placing the flat of your hand gently on the surface. Leave to cool in the pan before unmolding.
