    Lemon Bars

    List of Ingredients


    • For the crust
    • 1 1/4 cups all purpose flour
    • 1/4 cup confectioners' sugar
    • 1 1/4 sticks butter (10 tablespoons)
    • 1 tablespoon water, approximately
    • For the lemon topping
    • 1 1/4 cup granulated sugar
    • 1/4 cup all purpose flour
    • 4 eggs
    • zest of 3 lemons
    • 1/2 cup lemon juice
    • Confectioners' sugar


    Instructions


    1. Preheat oven to 350 degrees F. For crust, combine flour and sugar. Cut butter into flour mixture until it resembles fine meal. Add water and gently toss mixture until it just begins to hold together. Press dough into a greased 8x12 inch pan and bake until crust just begins to brown along the edges, about 15 minutes. Remove crust from oven and allow to cool slightly.
    2. For topping, combine all ingredients. Pour topping into the crust and bake until set, about 20 minutes. When cool, cut lemon bars into squares or diamonds. Dust with confectioners' sugar.


    Final Comments


    Makes 24 (2 inch) squares.
