Italian Style Scallops
This is an old recipe, but very good and easy!
List of Ingredients
- 3 lbs. sea scallops
- 3 cups sliced mushrooms
- 2 green peppers, diced
- 1/2 cup chopped parsley
- 2 teaspoons oregano
- 2 teaspoons paprika
- 1 8oz. can tomato sauce
- 2 cloves garlic, minced
Instructions
- Rinse and pat dry scallops. Place in baking pan with mushrooms and diced green peppers. Sprinkle with1/2 cup parsley,1 1/2 teaspoons each of paprika and oregano.
- In a small saucepan heat tomato sauce, garlic, 1/2 teaspoon each of oregano and paprika.
- Simmer covered, 5 minutes and pour over scallops and vegetables. Cover tightly and bake at 350 degrees for 30 minutes.
