    Recipe Introduction


    I liked this a lot. It was very tasty. Make sure you line the baking sheet with foil to aid in clean up.


    List of Ingredients


    • 4 boneless chicken breasts
    • 8 pieces bacon, coarsely chopped
    • 8 ounces fresh mushrooms, sliced
    • butter
    • 1 clove garlic, minced
    • 4 ounces shredded cheddar cheese


    Instructions


    1. Pound the chicken to about 1/4 inch thick.
    2. In a skillet, saute the mushrooms and garlic in butter. Cook until juices have evaporated.
    3. Fry the bacon in the same skillet until crisp, drain on paper towels, keeping the drippings in the pan.
    4. Saute the chicken in the bacon fat until juices run clear. Remove to a foil-lined baking sheet; season with salt and pepper. Top the chicken with the mushrooms and bacon, then with the shredded cheese. Broil until cheese is melted and bubbly.


    Final Comments


    Makes 4 servings. (2.5 carbs each)
    If you use a cast iron skillet, you can put in under the broiler and then you won't need to use the baking pan.
