Four Seasons Meatloaf

List of Ingredients
- 5 pounds ground beef
- 1 medium onion minced
- 2 stalks celery minced
- 2 medium carrots, minced
- 3 eggs
- 1 cup oats
- 1/2 cup catsup
- 2 cloves garlic minced
- 1 teaspoon fresh rosemary, finely chopped
- Tabasco sauce, to taste
- Worcestershire sauce, to taste
- Equal parts Catsup and maple syrup, mixed, for glaze
Instructions
- Preheat ofven to 350 degrees F.
- Mix all ingredients well, by hand. Place in a baking dish in a rectangular shape. Bake at 350 degrees F. for 45 minutes.
- Cool slightly and coat with a thin layer of catsup and maple syrup mixture. Raise oven temperature to 400 degrees F. and bake for an additional 10 minutes or longer until glaze is formed.
- Slice and serve with a pan gravy made from the drippings, an ounce of butter, a pint of beef broth, 4 ounces of whipping cream, a splash of red wine and sauteed mushrooms.
