Glazed Pork Medallions

- 1/2 cup balsamic vinegar
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 4 garlic cloves, minced
- 1 tablespoon Dijon mustard
- salt and pepper
- 1 package pork tenderloin, sliced into 1/2 inch medallions
- Canola oil, for searing
Instructions
- Preheat the oven to 350 degrees F. Make the Balsamic Honey Glaze, using the first 7 ingredients. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, rosemary, garlic, mustard, and salt and pepper.
- Coat the bottom of a medium skillet with some canola oil and heat over medium high heat until hot. Add the sliced pork in one layer, season with salt and pepper and sear on one side. Turn and sear the second side until lightly browned.
- Transfer the pork slices to a shallow baking dish, arranging them in one layer. Pour the balsamic honey glaze over the top. Turn the slices to coat.
Roast the pork slices for 10 minutes until done.
Final Comments
Serve with couscous and steamed broccoli.
