Recipe Introduction
Preheat oven to 325 degrees.
List of Ingredients
1 5 to 6 pound ham, fully cooked
2 teaspoons ground allspice
1 teaspoon ground cinnamon
1 tablespoon grated orange peel
1/2 cup orange juice
1/2 cup bourbon
1/2 cup brown sugar
2 teaspoons corn starch
1 cup chopped pecans
orange sections for garnish
Recipe
Cut the ham diagonally across the entire surface, about 1/4 inch deep. Place
ham on a roasting rack and insert a meat thermometer. Bake at 325 degrees about
1 1/2 hours, or until meat thermometer reads 125 degrees.
Mix all of the other ingredients together in a saucepan, except pecans. Bring
to a boil, over medium heat, stirring constantly. Add pecans and simmer for two
more minutes, still stirring. Remove from heat and keep warm.
Place 1/4 cup of the glaze in a bowl and brush it on the ham. Continue baking
the ham for another 30 minutes, or until thermometer reads 135 degrees.
Remove from oven and let ham stand for about 20 minutes. Slice ham and transfer
to a serving platter. Garnish ham with orange sections. Serve with remaining
glaze.
