    Sweet and Sour Meatballs

    This is from "Savoring the Seasons Riverside", the official Mum Fest cookbook from New Bern, NC.


    List of Ingredients


    • 1 lb. lean ground beef
    • 1/2 cup bread crumbs
    • 1 egg, beaten
    • 3 tablespoons A1 steak sauce
    • 1 clove garlic, crushed
    • salt to taste
    • vegetable oil
    • 1 (8 ounce) can pineapple chunks
    • 1 cup sliced carrots
    • 1 cup sliced celery
    • 3/4 cup beef broth
    • 2 tablespoons A1 steak sauce
    • 2 tablespoons soy sauce
    • 1 tablespoon vinegar
    • 1 teaspoon ginger
    • 1 tablespoon cornstarch
    • 1 tablespoon water
    • 1 large green bell pepper, cut into strips
    • Hot cooked rice


    Instructions


    1. Combine the ground beef, bread crumbs, egg, 3 tablespoons steak sauce, garlic and salt in a bowl and mix well. Shape into 1 inch balls. Brown in oil on all sides in a large skillet; drain.

    2. Stir in the pineapple, carrots, celery, broth, 2 tablespoons steak sauce, soy sauce, vinegar and ginger. Bring to a boil. Reduce the heat. Simmer, covered, for 5 minutes.

    3. Dissolve the cornstarch in the water in a small bowl. Stir into the meatball mixture. Add the bell pepper. Simmer, uncovered, for 5 minutes or until the vegetables are tender. Serve over rice.
