Recipe Introduction
This can be made with chicken instead of veal.
List of Ingredients
- 1 lb. veal scalloppini
- 1 cup white wine
- 1 clove garlic
- salt and pepper
- 1/4 cup flour
- 2 tablespoons oil
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1/4 cup chopped parsley
Instructions
- Ahead of time:
Pound veal very thin. Place into glass bowl, add wine and garlic, refrigerate.
- Serving time:
Drain veal, sprinkle with salt and pepper. Dip veal into flour, coat lightly. Heat oil and butter in skillet, brown 5 minutes on each side. Add lemon juice and parsley. Simmer for 5 more minutes.
Final Comments
Serve with Safron rice.
