    Raisin Bran Muffins

    Denise, my chiropractors wife, gave me this recipe.


    List of Ingredients


    • 4 ounces Raisin Bran Cereal
    • 1/4 cup oil
    • 1 egg
    • 3/4 cup sugar
    • 1 cup buttermilk
    • 1 1/4 cup flour
    • 1 1/4 teaspoon baking soda
    • 1/2 teaspoon salt


    Instructions


    1. Mix all ingredients together and bake in muffin tins or muffin papers at 375 degrees F. for approx. 20 minutes. You can use Crispy Wheats and Raisins instead of Raisin Bran cereal.
    2. After making the batter you can refrigerate it and use it whenever you want fresh baked muffins. The batter will stay fresh in refrigerator for several weeks.
    3. This can be enlarged. Use 1 20 ounce box of cereal and 1 quart of buttermilk, 1 1/4 cup oil, 3 3/4 cups sugar, 5 eggs, 6 1/4 cups flour,abd 6 1/4 teaspoons baking soda. This will make 6-7 dozen muffins.


    Final Comments


    Smaller batch makes 1 - 1 1/2 dozen muffins.
    Larger batch makes 6 -7 dozen muffins.
