    Beefy Chili Mac

    This recipe comes from the Beef Council. It is an easy dinner.


    List of Ingredients


    • 1 pound beef cubed steak
    • 1 medium onion, chopped
    • 2 cans (14 1/2 oz. each) chili-seasoned chunky tomatoes
    • 1 1/2 cups uncooked wagon wheel pasta
    • 1/2 cup shredded Monterey Jack or Cheddar cheese


    Instructions


    1. Cut beef steaks lengthwise into 1 inch wide strips, then cross wise into 1 inch pieces. Spray dutch oven with vegetable cooking spray; heat over medium-high heat until hot. Add beef and onion to pan; cook and stir 3 minutes.
    2. Stir tomatoes, pasta and 1/2 cup water into pan. Bring to a boil; reduce heat to low. Cover tightly; simmer 20 minutes or until pasta is tender. Sprinkle with cheese before serving.


    Final Comments


    Makes 4 servings.
    You can use any small shaped pasta. I have used elbows and ditalini.
