    •1 lb. fresh or frozen peeled/deveined raw shrimp
    •3 TB. olive oil
    •1 large yellow onion, thinly sliced
    •1/2 red bell pepper, sliced
    •1/2 yellow bell pepper, sliced
    •8 oz. fresh, sliced mushrooms
    •4 garlic cloves, chopped (or 11/4 tsp. MINCED GARLIC rehydrated in 1 TB. water)
    •1/4 Cup shredded Parmesan cheese PLUS
    •2 tsp. BASIL (or 4 TB. prepared pesto)
    •1 large bag fresh spinach, washed and dried
    •1/4 tsp. THYME
    •8-12 oz. freshly cooked angel hair pasta

    Recipe



    Heat the olive oil in a large skillet over medium-high heat. Add the onion, bell peppers and mushrooms and cook until softened, about 5 minutes, stirring frequently. Add the garlic and cook briefly. Add the BASIL and cheese or pesto, stir well, then add the shrimp and cook until the shellfish is nearly done, about 3-4 minutes. Add the spinach and THYME and cook briefly. Serve over angel hair pasta.

    Cooking time: 10-12 minutes
