    List of Ingredients


    • 1 pkg thin linguini, uncooked
    • 1/4 cup pine nuts
    • 1/2 cup olive oil
    • 3 large garlic clove diced
    • 1 head escarole, cut into 1 inch slices
    • ground black pepper
    • 1/2 cup grated Parmesean cheese


    Instructions


    1. Cook pasta according to pkg. directions.
    2. Cook and stir pine nuts in hot oil until lightly browned. remove.
    3. Add garlic to oil and cook until lightly browned.
    4. Remove garlic, discard.
    5. Add escarole, salt and pepper to oil.
    6. Cover and cook just until escarole wilts, about 3 minutes, stirring once.
    7. Mix pasta with escarole and cheese, tossing to coat.
    8. Sprinkle with pine nuts.


    Final Comments


    Makes 8 servings.
