Thin Linguine with Escarole, Pine Nuts,

- 1 pkg thin linguini, uncooked
- 1/4 cup pine nuts
- 1/2 cup olive oil
- 3 large garlic clove diced
- 1 head escarole, cut into 1 inch slices
- ground black pepper
- 1/2 cup grated Parmesean cheese
Instructions
- Cook pasta according to pkg. directions.
- Cook and stir pine nuts in hot oil until lightly browned. remove.
- Add garlic to oil and cook until lightly browned.
- Remove garlic, discard.
- Add escarole, salt and pepper to oil.
- Cover and cook just until escarole wilts, about 3 minutes, stirring once.
- Mix pasta with escarole and cheese, tossing to coat.
- Sprinkle with pine nuts.
