    List of Ingredients


    • 1/4 cup Italian dressing
    • 4-6 boneless chicken breasts
    • 2 cloves garlic, minced
    • 1 can diced tomatoes , undrained
    • 1 cup water
    • 2 cups Brown Minute rice
    • 1 cup shredded Mozzarella cheese
    • 1 medium tomato, chopped
    • 2 teaspoon chopped cilantro


    Instructions


    1. Heat dressing in large skillet on medium heat. Add chicken and garlic, cover. Cook 5 minutes on each side or until chicken is browned. Remove from skillet, set aside
    2. Add canned tomatoes and water to skillet. Stir in rice, bring to boil. Reduce heat to low, simmer, uncovered, 10 minutes. Return chicken to skillet. Sprinkle with cheese, cover.
    3. Cook on low heat, 5 minutes. Top with tomato and cilantro.


    Final Comments


    Serves 4.

    I made this with regular rice. I had no mozzarella so I used muenster. I had no cilantro, so I used parsley.
    Very tasty!!
