    Roasted Greek Style Chicken and Vegetabl

    List of Ingredients


    • olive oil
    • 3 cloves garlic, chopped
    • dried oregano
    • 1 T fresh lemon juice
    • salt and pepper to taste
    • 2 zucchini, sliced
    • 2 cups grape tomatoes, halved
    • 1 14 oz. can artichoke hearts, halved and drained
    • 4 boneless, skinless chicken breasts


    Instructions


    1. Preheat oven to 450 degrees F.
    2. In a large bowl, combine 4 teasspns oil, garlic, oregano, lemon juice, salt, pepper and vegetables. Toss to coat.
    3. With a slotted spoon, scoop out vegetables and place on one side of a baking pan, leaving room for chicken.
    4. Add chicken to mixing bowl, coat with remaining oil,lemon juice mixture. Place chicken on empty side of baking pan.
    5. Roast in 450 degree oven for about 20 minutes.


    Final Comments


    Enjoy. I use the premixed Spice Bouquet greek seasoning. And I add more lemon juice.
