    Macaroni and Cheese Like a Greek Salad

    List of Ingredients


    • 1/2 pound macaroni
    • 3 tablespoons olive oil
    • 2 tablespoons vinegar
    • 4 ounces feta cheese, crumbled
    • 6 Kalamata or other Greek olives, pitted and quartered
    • 1 teaspoon dried greek oregano
    • freshly ground black pepper


    Instructions


    1. Cook the macaroni until tender. Drain well.
    2. Pour into a mixing bowl and toss immediately with the olive oil.
    3. Add vinegar and toss again.
    4. Add the feta, olives, oregano, and several grinds of the pepper mill. The cheese and the olives are salty, so no extra salt is needed.
    5. Serve hot or at room temperature.
