Sicilian Tuna Salad

List of Ingredients
In a large bowl combine:
1 Belgian endive, chopped in 1/2 inch pieces
1 cup sliced radicchio
1 1/2 cups grape tomatoes
1/3 cup diced mozzarella or bocconcini
2 chopped scallions
10-12 green olives
1/3 cup diced red pepper
2 tsp. capers
1 or 2, 6 ounce cans tuna, well drained and flaked
Toss well.
Whisk together dressing:
1/4 cup olivve oil
2 Tbsp wine vinegar
2 tsp. minced garlic
1/2 tsp mustard seed
1 Tbsp lemon juice
1 Tbsp chopped parsley
Recipe
Toss salad with dressing and serve on leaves of Boston lettuce.
