    Aunt Etta's Zucchini Soup/ The Record

    This recipe was in the Record Newspaper. Sent in by Edda Pellerano Malich, from Fort Lee, NJ.


    List of Ingredients


    • 1 large onion, chopped
    • 2 teaspoons olive oil
    • 4 zucchini
    • 1/2 cup water
    • 10 cups beef broth
    • 3/4 cup Aborio rice


    Instructions


    1. Saute chopped onion in olive oil until golden.
    2. Slice zucchini; add to pot. Lower heat, cover pot, and steam until tender.
    3. In another large pot or 5 quart Dutch oven, heat broth. Add zucchini, onion, and rice. Simmer 15-20 minutes or until rice is cooked.
