    Tortellini Spinach Soup

    College Inn Chicken Broth Can


    List of Ingredients


    • 3 cloves garlic, minced
    • 1 tablespoon butter
    • 1 can (48 ounces) College Inn Chicken broth
    • 1 package frozen cheese tortellini
    • 1 package (10 ounces) frozen chopped spinach
    • 2 cans (14 ounce) stewed tomatoes, undrained, cut into pieces
    • grated Parmesan cheese


    Instructions


    1. In large saucepan, over medium-high heat, cook garlic in butter for 1 - 2 minutes. Add broth and tortellini. Heat to a boil, reduce heat and simmer tortellini 10 minutes. Add spinach and tomatoes. Simmer 5 minutes longer.
    2. Sprinkle each serving with cheese.


    Final Comments


    Makes 8 servings.
