    Tuscan White Bean Soup

    List of Ingredients


    • 1 teaspoon olive oil
    • 1 small onion chopped
    • 1 T minced garlic
    • 1 15 oz can cannellini beans, rinsed and drained
    • 1 14 ounce can diced tomatoes, undrained
    • 1 cup reduced fat chicken broth
    • 1 teaspoon dried thyme
    • 1/4 teaspoon black pepper
    • 2 cups baby spinach leaves


    Instructions


    1. In a large saucepan, heat oil, add onions and garlic, cook about 5 minutes.
    2. Stir in beans, cook 1 more minute.
    3. Stir in tomatoes, chicken broth, thyme and pepper. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
    4. Remove soup from heat and stir in spinach leaves. Let stand covered, for 1 minute to wilt spinach. Serve with grated parmesan cheese.
