    List of Ingredients


    • 1 large head red cabbage
    • 1 large onion
    • 2 large carrots
    • 1 large green apple
    • 1 tablespoon olive oil
    • 3 cloves garlic, peeled and chopped
    • 1 small bay leaf
    • 1/4 teaspoon ground cloves
    • 2 tablespoons light brown sugar
    • 1/4 cup red wine vinegar
    • 1 1/2 cups dry red wine
    • salt and pepper to taste


    Instructions


    1. Peel and slice onion. Peel and slice carrots into rounds.
    2. Remove and discard outermost leaves of cabbage, cut head into quarters, remove the core, and slice each quarter into 1/4 inch thick slices. Peel and core apple and dice.
    3. Heat olive oil in heavy saucepan, add onion and carrot, and cook over medium heat, stirring, until onion is translucent. Add cabbage and apple and toss well. Add all remaining ingredients. Bring to low boil, cover, and cook about 1 hour. Remove bayleaf, correct seasoning and serve.
