    Broccoli & Cauliflower Roast

    We all know that the cruciferous vegetables may lower the risk of cancer. Here is a recipe I found in the 3/01 edition of Energy Times magazine.


    List of Ingredients


    • 1 bunch broccoli
    • 1 head cauliflower
    • 1 large Bermuda onion
    • 1/8 cup olive oil
    • 3 shredded cloves garlic
    • 1 teaspoon salt
    • 1/2 teaspoon cracked black pepper
    • 1 tablespoon rosemary
    • 1/8 cup parmesan cheese


    Instructions


    1. Preheat oven to 400 degrees F.

    2. Cut washed broccoli and cauliflower in florets. Peel and slice onion.
    3. Place veggies in 13x9 inch roasting pan. Drizzle with olive oil, sprinkle with garlic, salt, pepper and rosemary, toss until vegetables are lightly coated with oil and spices.
    4. Roast for 30 minutes, stirring once after 15 minutes, or until vegetables are al dente.
    5. Sprinkle with parmesan cheese.
