    List of Ingredients


    • 2 lb. peeled potatoes4 T. olive oil
    • 1/2C canned chick peas
    • 2 cloves garlic, chopped
    • 1 can stewed tomatoes
    • 2 T. tomato paste
    • salt and peo\pper
    • Chopped fresh parsley


    Instructions


    1. Slice potatoes thick.
    2. Saute onions until transparent in oil in large skillet.
    3. Add chick peas and chopped garlic.
    4. Add potoes, turning until golden brown.
    5. Add tomatoes and tomato paste, diluted with 1/2 cup water.
    6. Season with salt and pepper.
    7. Simmer until potatoes and chick peas are fork tender.
    8. Sprinkle with parsley.


    Final Comments


    Serve warm or cold.
    Serves 6.
