Zucchini-Tomato Saute with Feta Cheese
This recipe comes from the April 2001 edition of Health magazine. It can be served over a bowl of pasta.
List of Ingredients
- 1/2 teaspoon olive oil
- 1 cup coarsely chopped onion
- 4 cups (about 1 lb.) sliced zucchini
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 cups cherry or grape tomatoes
- 1/4 cup (1 ounce) crumbled feta cheese
- 2 teaspoons chopped fresh dill
Instructions
- Heat oil in a large nonstick skillet over medium-high heat. Add onion, saute 3 minutes. Add zucchini, salt and pepper; saute 3 minutes. Add tomatoes; saute 4 minutes. Remove from heat. Stir in cheese and dill.
