    Long Lost Hobo Bread

    From “The New Soul Food Cookbook”

    List of Ingredients

    1-1/3 cup yellow cornmeal
    1/4 cup shredded uncooked white potatoes, peeled
    1 tsp. Baking powder
    2 cups skim milk
    1 Tbsp. Lemon juice
    2 egg whites, lightly beaten
    2 Tbsp. Chopped fresh green onions (scallions)
    Nonfat nonstick cooking spray

    Recipe

    In a large bowl, combine the cornmeal, potatoes, and baking powder. Add the milk and lemon juice. Stir in the egg whites and scallions. Spoon about 2 tablespoons of batter into a hot nonstick skillet lightly coated with nonstick cooking spray. Cook on each side for 2 minutes or until brown.

    Makes about 12 bread patties.
