    Quick and easy to make. Freezes well! Good any time of day.

    List of Ingredients




    1/2 cup light brown sugar
    1 1/2 cups oat bran
    1/2 cup whole wheat flour
    1 cup of all purpose flour
    2 tsp. baking powder
    2 tsp. baking soda
    2 large eggs
    1 cup of applesauce
    4 Tablespoons of canola oil
    cinnamon sugar to sprinkle on top
    dried cranberries, raisins, soaked in rum(optional)
    chopped walnuts (optional)

    Preheat oven to 350 degrees. Line muffin pan with paper liners. If you want, you can add some raisins & dried cranberries to a few Tablespoonsof rum and let soak for a few minutes. Using electric mixer, blend together the brown sugar, oat bran, whole wheat flour, all purpose flour, baking powder and baking soda. Add the eggs, applesauce, & vegetable oil and mix well. Spoon batter into the liners. Sprinkle cinnamon sugar on top before baking, and bake in 350 oven for approximately 15 minutes.

    Note: I like making a variety of these by taking out a cup of batter at a time and adding various fruits and nuts and then spoon into my liners. Enjoy with a good cup of coffee!!!
