    A great quick dish. I will often make this for a buffet. Another good way to serve it is on fresh, crisp rolls or Italian Bread.

    List of Ingredients




    1 lb. sweet italian sausage, sliced into bite size pieces
    1 lb. hot italian sausage, sliced into bite sized pieces
    1 med onion, sliced
    2 green italian frying peppers, sliced
    2 red italian frying peppers, sliced
    3 baked potatoes, sliced ( already cooked)
    2 cloves minced garlc
    1/2 cup white wine
    1 tsp. thyme
    1 tsp. oregano
    1/4 cup extra virgin olive oil

    Recipe



    Heat large saute pan and add extra virgin olive oil. Add peppers and onions and cook till almost tender. Slice the 3 baking potatoes and add the sliced potatoes to the peppers and onions. Continue to cook until the potatoes have a golden brown color. Remove the peppers, onions and potatoes from saute pan and set aside. Put the sliced sausage into the saute pan and cook till sausage is done. When sausage is cooked add the peppers, onion and potatoes back into the pan. Add the garlic, thyme, oregano and wine. Continue cooking scraping all the little bits from the bottom of the pan. Cook for 5 minutes more than remove from stove. May be served as is or spoon onto rolls or italian bread for sandwiches.
