    8 Boneless skinless chicken breasts
    3 eggs beaten
    1 cup flour
    1 cup bread crumbs
    1/4 cup olive oil
    juice of 1 lemon
    1/2 cup white wine
    4 Tbsp. parsley
    4 Tbsp. capers

    Recipe



    Add 1/4 cup oil to pan. Dip cutlets in flour to coat. Dip cutlets in egg then in bread crumbs. Place in frying pan when the oil is hot. Cook on both sides until golden brown. Pour juice of 1 lemon and 1/2 cup wine over cutlets. Cook down. Add parsley & capers.
