    Eggplant and Mozzarella Pannini

    This is a great sandwich for lunch or serve as a light summer dinner. I use my indoor grill for this recipe to create my paninni sandwiches.

    List of Ingredients




    1 eggplant, peeled and sliced
    extra virgin olive oil
    1 lb. fresh mozzarella cheese, sliced
    roasted red peppers (optional)
    ciabatta bread, sliced

    Herb Spread:
    3 cloves garlic
    1/2 cup fresh basil
    1/4 cup flat leaf parsley
    3 Tablespoons olive oil

    Recipe



    Brush your grill with olive oil. Grill your eggplant slices on the grill. When done, remove and set aside.

    For the herb spread: In a food processor, combine the garlic, basil, parsley and oil. Blend until all is combined well.

    To assemble the sandwiches: Spread the herb spread on one slice of ciabatta bread. Next place a slice of eggplant, a slice of mozzarella and a roasted pepper if desired. If desire, place another layer of eggplant, mozzarella & roated pepper. Top with a slice of ciabatta bread and brush with olive oil. Place the stacked sandwich back onto the grill and close down top, pressing lightly. Continue to grill sandwich untill toasty and cheese is melted. Remove from grill & serve! Enjoy!
