    Stuffed Baked Eggplant

    I like to serve this with a fresh garden sald on the side.

    List of Ingredients




    1 large eggplant, cut lengthwise in half
    extra virgin olive oil

    Stuffing:
    1 onion, thinly sliced
    2 tablespoons of olive oil
    2 cups of mushrooms, any kind
    1/4 cup of white wine
    1 lb. of turkey sausage, removed from casing

    Recipe



    Make the stuffing by sauteing the onion in olive oil until carmelized. Next add the mushrooms and saute till nice and crisp usually about 10 minutes. Add the wine and cook for a couple minutes. Lower the heat and simmer for 10 minutes more. Remove from heat

    Scoop out just enough of the eggplant from the middle to make room for the stuffing. Fill the middle of the hollowed eggplant with the stuffing mixture. Place on cookie sheet, drizzle with a little extra virgin olive oil. Place in 350 degree oven and bake till eggplant is cooked, about 10 to 15 minutes. Remove from oven & Serve! Enjoy!
