    If you prefer, you may substitute any other package seasoning mix, such as, Jamacian Jerk or other spicy mix.


    List of Ingredients


    • 1 large mango, peeled, seeded,and finely chopped
    • 1/2 cup finely chopped red bell pepper
    • 1/4 cup finely chopped red onion
    • 3 TBSP chopped cilantro
    • 1TBSP fresh lime juice
    • 1/4 tsp salt
    • 1/8 tsp fresh ground pepper
    • 4 tsp cajun seasoning
    • 36 extra-large shrimp, peeled and deveined
    • 3 tsp olive oil


    Instructions


    1. To prepare the salsa, combine the mango,bell pepper, onion,cilantro,lime juice, salt and pepper in a bowl; set aside.
    2. Place cajun seasoning in a small bowl. Dip both sided of each shrimp into the seasoning to coat. Heat a large non-stick skillet over medium-high heat. Swirl in 1-1/2 tsp of oil, then add half of the shrimp without over crowding the skillet. Cook until shrimp are just opaque in center, 2-3 minutes on each side. Repeat with remaining shrimp and oil. Let shrimpt cool to room temperature.
    3. Place the mango salsa in a serving bowl. Hang the shrimp around the rim of bowl. Serve at once.
