    You may substitute your favorite olives to customize this
    savory loaf. It can be made in your bread machine. Just follow ingredient placement by your machine. Preheat oven to 375 degrees


    List of Ingredients


    • 1 package dry yeast (21/2 tsp)
    • 2 tsp sugar
    • 1/2 cup warm water (105 to 115 fahrenheit)
    • 3 cups bread flour, divided
    • 1/2 cup corn meal
    • 3/4 cup plain yogurt or sour cream
    • 1/2 cup chopped green olives (your choice)
    • 1 Tbsp olive oil
    • 1 tsp dried rosemary
    • 3/4 tsp salt
    • cooking spray


    Instructions


    1. If by hand; dissolve yeast and sugar in warm water in a small bowl; let stand 5 minutes.
    2. Combine yeast mixture, 11/2 cups flour,cornmea,yogurt or sour cream,olives,oil,rosemary and salt in a large bowl. Beat a medium speed until blended. Add 11/2 cups flour; stir until soft dough forms. Turn dough out onto a lightly floured surface. Knead until smooth and elastic ( aboout 8 minutes). Place in a large bowl coated with cooking spray, turning to coat top.
    3. Cover and let rise in a warm, draft free, place 1 hour or until doubled in bulk. Punch dough down; turn out onto lightly floured surface and let rest 5 minutes. Knead lightly. Roll into a 14x7 inch rectangle. Roll up starting with short edge, pressing firmly to eliminate air pockets; pinch seam and ends to seal.

    4. Place roll, seam side down, in 9x5 inch loaf pan coated with cooking spray. Cover and let rise 45 minutes or until double.
    5. Uncover dough; bake for 30 minutes at 375 degrees or until loaf sounds hollow when tapped.
    6. Remove pan immediately and cool on wire rack.
