    "Quick Cooking"

    Recipe Introduction

Here is a good way to make crazy Italian/Mexican food.

    List of Ingredients

    • 1 pound of lean ground beef
    • 1 can(16 ounces) refried beans
    • 2 1/2 tsp chili powder
    • 1 1/2 tsp dried oregano
    • 1 pkg (8 ounces) manicotti shells
    • 2 1/2 cups water
    • 1 jar (16 ounces) picante sauce
    • 2 cups sour cream
    • 1 cup shredded Monterey Jack or Mexican cheese
    • 1/4 cup sliced green onions
    • sliced ripe olives, optional

    Instructions

    1. In a bowl combine the uncooked beef, beans, chili powder and oregano. Spoon into cooked manicotti shells;
    2. Arrange in a greased 13in.x 9in. baking dish. Combine water and picante sauce; pour over shells
    3. Cover and refrigerate overnight.

    4. Remove from a rewfrigerator 30 minutes before baking.
Cover and bake at 350 degrees for 1 hour.

    5. Uncover; Spoon sour cream over top, sprinkle with cheese, onions and olives if desired. Bake another 5-10
or until cheese is melted. Yields 8 servings

    Final Comments

I usually just put it straight into oven. I don't wait over night.
