    Use very fresh corn for the sweetest flavor.


    List of Ingredients


    • 1 tsp canola oil
    • 2 TBSP finely chopped green bell pepper
    • 2 TBSP minced shallot
    • 1/4 tsp curry powder ( use 1/2 tsp if want more intense curry flavor)
    • 3/4 cup corn kernels (from 1 large ear)
    • 1 small red skinned potato (about 3 oz),peeled and cut into 1/4-inch cubes
    • 1/4 cup reduced-sodium vegetable or chicken broth
    • 1/8 tsp salt
    • fresh ground pepper
    • 3/4 cup fat-free milk
    • pinch paprika


    Instructions


    1. Heat a small nonstick saucepan over medium heat. Swirl oil, then add bell pepper and shallot. Cook stirring occasionally, until tender, about 5 minutes. Add the curry powder; cook stirring until just fragrant, 30 seconds.
    2. Stir in corn,potato,broth,salt, and pepper. Bring to boil over high heat; cover and simmer until vegetables are tender, about 5 minutes.
    3. Transfer 1/2 cup of the vegetable mixture to a blender; add the milk and puree until nearly smooth. Return to saucepan and cook over medium heat, stirring gently, just until heated through. Sprinkle with the paprika just before serving.


    Final Comments


    Shallots are members of the onion family and look like smaller, brown skinned onions, but are actually bulbous herbs, with a mild onion-garlic flavor.
