    Cashew Lemon Shortbread Cookies

    List of Ingredients




    1/2 c. roasted cashews
    1 c. butter, softened
    1/2 c. sugar
    2 tsp. lemon extract
    1 tsp. vanilla
    2 c. all-purpose flour

    Recipe



    Preheat oven to 325 degrees. Place cashews in food processor and process until finely ground. Add butter, sugar, lemon extract and vanilla. Process until well blended. Add flour, process using on/off pulsing action until dough is well blended and begins to form a ball.

    Shape dough nto 1 1/2 inch balls. Roll in additional sugar. Place about 2 inches apart onto ungreased baking sheets. Flatten with bottom of glass.

    Bake cookies 17 - 19 minutes or just until set and edges are lightly browned. Remove cookies from baking sheets to wire rack to cool.

    Makes 2 - 2 1/2 dozen cookies.
