    List of Ingredients




    Crust:
    2 c. flour
    /4 c. sugar
    1 c. cold butter or margarine

    Filling:
    2 c. sugar
    1 c. whipping cream
    3 eggs, beaten
    5 c. fresh rubarb, finely chopped or frozen thawed/drained

    Topping:
    2 pkgs. 3 oz. cream cheese, softened
    1/2 c. sugar
    1/2 t. vanilla
    1 c. whipping cream, whipped

    Recipe



    In a bowl,combine the flour and sugar. Cut in butter until mixture resembles course crumbs. Press itnto a greased 13 x 9 x 2 baking pan and bake at 350 degrees for 10 minutes.

    Meanwhile, for fill, combine sugar and flour in a bowl. Wisk in cream and eggs. Stir in the rubarb and pour over crust. Bake at 350 degrees for 40 - 45 minutes or until custard is set. Cool.

    For topping, beat cream cheese, sugar and vanilla until smooth. Fold in whipped cream. Spread over top. Cover and chill. Cut into bars and serve. Store in refrigerator.
