    Dried cherries are very more-ish morsels imported from North America. Unfortunately, they are also rather expensive, so if you'd rather not use them, substitute raisins or even craisins (dried cranberries which are now available in supermarkets). We used Granita biscuits in this recipe, but you can substitute just about any plain sweet biscuit if you like.


    List of Ingredients


    • 125g unsalted butter
    • 125g dark cooking chocolate or chocolate Melts
    • 1 egg, beaten lightly
    • 1/4 cup caster sugar
    • 1 tablespoon water
    • 250g packet wheatmeal biscuits, crushed coarsely
    • 60g dried cherries, chopped coarsely
    • 60g pecans, chopped coarsely


    Instructions


    1. Grease and line a lamington pan with baking paper. Combine the butter and chocolate in the top of a double boiler over a saucepan of simmering water and heat until they melt and combine. Place the egg, sugar and water in another bowl, place the bowl over the saucepan of hot water and whisk the ingredients together until the mixture is pale and fluffy - this will take about 3 or 4 minutes. Remove from the heat and whisk in the melted chocolate mixture.
    2. Combine the biscuits, half the cherries and half the pecans in a medium-sized mixing bowl, pour over the chocolate/egg mixture and sir to combine all ingredients thoroughly. Spoon the mixture into the prepared lamingrton pan, smooth out the surface and press in the remaining chopped cherries and pecans. Refrigerate for several hours or overnight before turning out and cutting into slices.
