Lemon Meringue Pie
1 1/2 c sugar (I used 1 cup sugar and 1/2 cup Splenda)
3 Tbls cornstarch
3 tbls flour
1 1/2 c hot water
3 egg yolks, slightly beaten
2 Tbls butter
1/2 tsp lemon peel (didn't have any)
1/3 c lemon juice (I used reconstituted)Recipe
Mix together sugar, cornstarch and flour. Add water and bring to a boil stirring constantly. Reduce heat and continue cooking and stirring for 8 minutes. Beat egg yolks ; add a small amount of hot mixture to yolks then add that mixture to sugar mixture. Bring back to boil and cook 4 minutes more. May need to add a few drops of yellow food coloring. (I didn't and it is really yellow in color) Add butter, lemon peel and slowly add lemon juice. Cook until butter is melted. (1-2 minutes). Pour into prebaked pie shell. Add meringue.
I used my Betty Crocker recipe for the meringue.
3 eggs whites beaten with 1/4 tsp of cream of tarter until frothy
add 6 Tbls of sugar a little at a time until stiff.
add 1/2 tsp of vanilla
Place on hot pie filling and bake at 400 degrees oven for 8-12 min.
