    2 C flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1 1/2 C oil
    4 eggs
    1 1/2 C honey
    1 tsp vanilla
    3 C grated carrots
    1/2 C chopped pecans or walnuts (optional: raisens, coconut)

    Recipe



    Mix together flour, baking powder, soda, cinnamon and salt. Add oil and mix thoroughly. Add eggs one at a time, beating thoroughly after each addition.
    Add honey and vanilla and mix thoroughly: Blend in carrots and nuts.

    Pour into greased 9x13-inch baking pan. Bake at 350 F for 1 hour.
