    Recipe Introduction


    Makes 6 pints of chicken mix and 6 pints of chicken broth.


    List of Ingredients


    • 11 pounds chicken -- cut up
    • 4 quarts cold water
    • 3 tablespoons dried parsley
    • 4 carrots -- peeled and chopped
    • 4 teaspoons salt
    • 1/2 teaspoon pepper
    • 2 teaspoons dried basil


    Instructions


    1. Combine all ingredients in a large pot or Dutch oven.
    2. Cover and cook over high heat until water boils.
    3. Simmer until chicken is tender, about 1 1/2 hours.
    4. Remove from heat.
    5. Strain broth and refrigerate until fat can be skimmed.
    6. Cool chicken, remove and discard bones and skin.
    7. Put chicken into six 1-pint freezer containers, leaving 1/2" space at top.
    8. Pour skimmed chicken broth into six more 1-pint containers, with 1/2" space at top.
    9. Seal and label with date and contents.
    10. Freeze.
    11. Use within 3 months.
