    Somersize Fusili Pasta Salad
    CARBOS AND VEGGIES – LEVEL ONE
    This chilled pasta salad is great for picnics, and it’s a snap to make. Feel free to add any of your favorite vegetables.


    1 package Somersize Vegetable Fusili
    1 pint non-fat sour cream
    1 package Somersize Sun-Dried Tomato Dip Mix
    Almost 1 tablespoon balsamic vinegar
    1 cup cooked green beans, chopped
    1 can artichoke hearts (in water), drained
    Freshly ground black pepper


    Prepare fusili according to package instructions. Strain and run cold water over the cooked pasta.


    Place sour cream, dip mix, vinegar and pepper into a mixing bowl. Stir to combine. Add cooled pasta, green beans and artichoke hearts and gently toss to combine. Chill until ready to serve.
