    Chicken Lime Soup

    List of Ingredients




    2-14.5 oz cans chicken broth
    2 cups water
    3/4 cup Mexican stewed tomatoes
    1 bay leaf
    1 garlic clove, pressed
    1/4 tsp. ground cumin
    1/8 tsp. dried, crushed red pepper flakes
    12 oz. chicken breasts, cut into strips (boneless & skinless)
    2 green onions, sliced
    1/4 cup chopped cilantro
    2 TB lime juice
    Cheese (I use pepperjack)

    Combine broth, water, tomatoes, bay leaf, garlic, cumin, and red pepper. Bring to boil. Reduce heat and simmer for 5 minutes. Add chicken, simmer until cooked through, about 5 minutes. Stir in green onions, cilantro and lime juice. Season with salt and pepper. Ladle into bowls, sprinkle cheese over soup
