    Terry's Beef and Cheese Enchiladas


    List of Ingredients


    • 1 Package of Large Tortillas
    • 3 Cans of Enchilada Sauce (Mild, Medium or Hot)
    • 1 1/2 Pounds of Ground Beef
    • Shredded Cheddar Cheese (we use about 2 small bags)
    • 1 Can of Rotel
    • 1 Package of Taco Seasoning
    • 9 X12 Glass Dish


    Instructions


    1. First you brown the ground beef, drain it and add the taco seasoning (follow instructions on the package). After the ground beef is done set it aside.
    2. Then take and open all three cans of enchilada sauce and put it in a frying pan. You will need to simmer the sauce for just a second or two (do not bring it to a boil it will burn to the bottom of the pan). You take a tortilla and put it in the pan, get it coated with the sauce and flip it to get the other side coated. Place the tortilla in the glass dish and add some beef, cheese and rotel to it. Then roll the tortilla up and move it to the end of the pan, repeat this step until all the tortillas are gone or you dont have any more room.
    3. Take the sauce that is left over in the pan and pour it over the enchiladas and then put cheese on top of that.
    4. You can either put it in the microwave on high for 10 minute or put it in the oven for about 15 minutes on 350. You are just trying to get the cheese melted completely throughout.

    This is an simple recipe and its fun to adjust it and add different items to our enchiladas.
