    ORANGE BEEF WITH CASHEWS

    List of Ingredients





    1pound beef sliced for stir fly
    2Tbsp brown sugar
    6Tbsp reduced-sodium soy sauce
    2 Tbsp bottled chopped garlic
    4cups prepared broccoli flowerets
    2 Tsp water
    4 green onions, cut into 1-inch lengths
    2/3cup orange juice
    2 Tbsp cornstarch
    2Tbsp rice-wine vinegar
    2 Tsp ground ginger
    1/2 Tsp red pepper flakes
    2 Tbsp peanut oil
    1/2cup salted cashew
    Instant brown rice, 4serving prepared according to package directions
    Thin strip lemon rind for garnish

    Recipe




    1.Combine beef, brown sugar, 2Tbsp soy sauce and garlic in plastic food-storage bag; seal; turn to coat meat. Let stand briefly
    2.Meanwhile, place broccoli and 2 Tsp water in microwavable plate. Cover tightly with plastic wrap. Microwave on high for 2min.
    3.Stir together green onions, remaining soy sauce, the orange juice, cornstarch, rice-wine vinegar, ginger and red pepper flakes in a small bowl.
    4.Heat peanut oil in wok or large skillet over high heat. Add beef with marinade; stir-fly 1 to 3 min or until heated through. Add cashews; cook 1min. Stir in green onion, orange juice mixture; cook 2 to 3 min or until thickened
    5.Serve immediately with instant brown rice and garnish with thin strips lemon rind if desired.
