    Chicken Gumbo
    4 Boneless Chicken Breasts
    16 oz Pkg Chopped Okra
    12 Green Onions (chopped)
    Vegetable Oil
    1/3 Cup Flour
    1 Tbsp Hot Sauce
    3 Bay Leaves
    2 Tbsp Fil$B!&(BPowder
    1 Tsp Celery Powder
    1 Large Can Peeled Tomatoes
    1 Large Can Stewed Tomatoes
    2 Cans Chicken Stock
    4 Cups Water

    Recipe



    In a six quart covered pot, fry okra over medium heat in 1/3 cup vegetable oil until it begins to brown. Add green onions and cook until onions are soft. Add flour and cook until flour begins to brown. Note: this will cause the mixture to "gum up", but continue to cook until browning begins. Stir in chicken stock, water, and tomatoes. Increase heat, bring to a boil. Add remaining ingredients, except for chicken, cover and simmer for 30 minutes.
    Cut chicken into bite sized pieces, season with celery powder (as if adding black pepper to mixture), and fry in 1 tbsp oil until lightly brown. Stir chicken into gumbo and simmer uncovered for 15 minutes.
    Serve over rice.
