Chinese Baked Chicken
The chicken turns out beautifully glazed and moist and tender. It is equally good hot or cold.
1 large chicken -- cut up
1 tablespoon oil
1/2 cup water
1/3 cup soy sauce
1/3 cup brown sugar
1 tablespoon ketchup
1/4 cup apple juice
1/4 teaspoon crushed red pepper
2 garlic cloves -- minced
1 green onion -- chopped
Recipe
Place chicken pieces in a large plastic bag. Mix remaining ingredients together and pour over chicken. Seal bag, place in a bowl and refrigerate for several hours or overnight.
Arrange chicken pieces in a large shallow baking dish with the marinade. Bake at 350 degrees for about one hour, basting once or twice.
