GOLDEN PAMESAN CHICKEN

GOLDEN PAMESAN CHICKEN
Serve 4
4 chicken boneless fillet (or I use boneless chicken breast)
1-1/2cup fresh white bread crumb
1/2cup finely grated Parmesan cheese
2Tbsp chopped fresh parsley (or dried parsley)
2eggs beaten
4Tbsp butter melted
Salt and ground block pepper
Crisp green salsa, to taste (optional)
FOR THE GARLIC MAYONNAISE
1/2cup plain yogurt
1/2cup mayonnaise
1-2garlic crushed
Recipe
1. Cut each chicken fillet into four or five chunks. Mix together the bread crumbs, Parmesan cheese, parsley and salt and pepper in a shallow dish
2. Dip the chicken pieces in the beaten egg, then into the breadcrumb mixture. Place in a single layer on a baking sheet and chill in the fridge at least 30min.
3. Meanwhile, to make the garlic mayonnaise, mix the mayonnaise, yogurt, and garlic. Chill in the fridge until ready to serve
4. Preheat oven to 350F. Drizzle melted butter over the chicken pieces and cook for about 20min, until crisp and golden. Serve the chicken with a crisp and green salsa and the garlic mayonnaise for dippin
