PINNEAPPLE GLAZED CHICKEN
1Lb boneless uncooked chicken.
2Tbsp vegetable oil
1/2cup green bell pepper 1-inch piece.
1/2cup medium onion cut in -inch slices.
1 (8oz) can pineapple slices.
2Tbsp soy sauce
1Tbsp sake or dry sherry
1Tbsp cornstarch
Recipe
Cut chicken in 1-inch pieces to make about 1 1/2cup chicken. Heat oil in a large skillet. Add chicken pieces. SautE2min.
Add green pepper and onion stir-fry until chicken is tender. Drain pineapple reserve juice. Cut pineapple into 1-inch wedges. In small bowl, combine reserved pineapple juice, soy sauce, sake or dry sherry and cornstarch. Pour over chicken, stir-fry until sauce has thickened slightly and chicken and vegetable are well coated. Serve over rice.
